Quiche is a great dish for breakfast, lunch, or dinner, and packed with protein! I love experimenting and making different versions of quiche. Here is my latest version.
a thawed pie crust
1/4 cup chopped vidallia onion
1 roma tomato sliced
2 sprigs of fresh basil
1 carton of thawed cheese quiche mix from grocery freezer section (yes there is help these days, and keeps us from having to do all of the prep work!)

Directions: Open quiche carton and poor into a bowl, pour in onions and fresh basil leaves. Pour entire mixture into the pie crust, layer tomatoes on top and place in oven according to back of quiche carton. Absolutely Delicious!!
