Summer Succotash Salad


This is a great treat for the summer! Simply refreshing!

Ingredients:

  • 1 small onion, chopped
  • 1 small green pepper, julienned
  • 1 small sweet red pepper, julienned
  • 2 tablespoons Splenda
  • 3/4 teaspoon salt
  • 1/3 cup cider vinegar
  • 3 cups fresh or frozen corn
  • 1 cup fresh or frozen lima beans
  • 1/2 cup edamame/soy beans, out of shells
  • 1 teaspoon minced chives
  • 1/2 teaspoon lemon-pepper seasoning

Directions:

Mix onion, pepper, chives, salt, edamame, and Splenda. Gradually and vinegar, stirring constantly. Add corn and lima beans. Add chives and lemon pepper; toss. Place in the refrigerator for 2 hours. Serve chilled. Yield: 4-6 servings. 1/2 cup=12 g of protein
